Standardized HACCP training: assurance for food authorities

摘要
In the early 1990s it was becoming apparent in the U.K. that too few HACCP practitioners had satisfactory trainer skills and too few trainers had practical experience of HACCP. A generally agreed standard for HACCP training was needed. A team of reputable HACCP practitioners and training designers at the RIPHH produced a Standard for Trainers wishing to develop HACCP courses, and a validating rest. After one year; the Training Standard has achieved worldwide recognition, now offering the necessary benchmark. In future, food business managers must be encouraged to develop a cadre of good qualify training in risk-based hygiene management, based upon agreed and independently monitored standards.
