摘要
Jerusalem artichoke has one of the highest carbohydrate yields of the known agricultrual crops and has many distinct advantages over traditional crops. This brief review presents data on the yield and composition of Jerusalem artichoke, techniques of carbohydrate extraction and its utilization for the production of ethanol, single cell protein (SCP), and high-fructose syrup, along with economic considerations.
