摘要
A new acyltransferase from shoots of Piper nigrum was detected which catalyses the synthesis of piperine in the presence of piperoyl-coenzyme A and piperidine. Minor reaction rates were observed with pyrrolidine and 3-pyrroline, while various other related heterocyclic compounds were not accepted as substrates. The enzyme had a Mr of 40000 and a pH optimum of 7.0; it can be classified as 'piperoyl-CoA: piperidine N-piperoyltransferase' (piperidine piperoyltransferase; EC 2.3.1.-). © 1990.
