摘要
The adulteration of foods and beverages is a long-standing problem. Its detection provides a battleground of wits between the regulatory and quality control chemists representing government and industry, who are developing new test methods, and the 'chemists in black lab coats', who are looking for ways to produce the perfect substitutes that circumvent their efforts.
