Oak wood chips were subjected to heat treatment at temperatures ranging from 120 to 250-degrees-C for 1,3 and 6 hours. HPLC analysis of alcohol-water extracts at 55% (v/v) obtained after maceration of these chips revealed two stages. At temperatures of between 120 and 185-degrees-C, there was an increase in ellagic acid contents from ellagitannins (castalagin) and in cinnamic and benzoic aldehydes from lignins. Above 185-degrees-C, a more intense thermolysis process caused the disappearance and degradation of the previously formed monomer compounds. Increase in treatment time caused an acceleration of all these modifications. In addition, lynoniresinol remained stable up to 215-degrees-C.
