IDENTIFICATION BY IMMUNOELECTROPHORESIS OF BOVINE MILK PROTEINS

摘要
Electrophoretic and immunoelectrophoretic methods were used in analyzing casein, whey and whole cow's milk. Twenty-six proteins were observed by immunoelectrophoresis. Six of them were of serum origin, seven from whey, eleven from casein and two of undetermined origin. The electrophoretic mobility and some of the morphological and chemical characteristics are described. © 1969, American Dairy Science Association. All rights reserved.
