Pectic substances from cherry fruits (P. avium) were studied after extraction successively by water, oxalate, hot dilute HCl and cold dilute NaOH. Each of the fractions contained mainly galacturonic acid and arabinose, as well as galactose and rhamnose. The degree of methylation was zero for the alkali-soluble pectic substances and high (> 57.2%) for the other fractions. Heterogeneity in MW distribution as well as in charge was checked by gel filtration on Sepharose CL-2B and DEAE-Sepharose CL-6B, respectively, while their MW were determined by viscosity measurements.
