摘要
A new method is described for producing liposomes suitable for food related applications. Liposomes are obtained by dispersing phospholipids in an aqueous phase under high shear forces. A model was developed to Select lipid and protein concentrations in order to obtain a relatively high efficiency of encapsulation.
