摘要：
NMR spectra of muscle water suggest that it exists in at least two ordered phases, which can be distinguished by the widths of their NMR signals, by deuterium exchange and by vacuum drying. Heat denaturation of muscle protein lessens this ordering. © 1969 Nature Publishing Group.
