摘要
Flow-injection/stopped-flow procedures are described for the determination of free L-(-)-malic acid based on the catalytic activity of malate dehydrogenase. Malic acid concentrations higher than 7.5 x 10(-7) M can be determined with a sampling frequency of 80 h-1. The proposed procedures were applied to the determination of the L-(-)-malic acid content in samples of different types of wine and must undergoing malolactic fermentation.
