摘要
A linear relationship (r = .89) was found between casein-pellet-solvation and heat stability at 135 C for individual cow milks. Casein-pellet-solvation was determined by centrifugation of whole milk at 68,000 g for 35 min at 37 C. © 1969, American Dairy Science Association. All rights reserved.
