Considerable consumer concerns about chilled food production, distribution and storage systems have, during the last decade, led to increased surveillance and legislative control of most elements of the chilled food chain. However, whilst the rest of the temperature control chain is ever more strictly regulated. the conditions to which chilled foods are subjected after purchase are determined solely by the consumer. This paper investigates the typical operational temperatures of a representative selection of domestic refrigerators. It then examines the effect that storage at such temperatures has on the microbiological quality of milk as an index of potential risk.
