摘要
Extracts of carrot roots and tomato fruits show a range of carbohydrase activities, including substantial maltase, nigerase, and isomaltase activity. In addition, the extracts unexpectedly showed disporportionation activity ith maltotriose and higher maltosaccharides. This latter activity (D-enzyme) can be separated from the α-glucosidases by continuous electrophoresis. The purified D-enzymes show a similar catalytic activity to the corresponding potato enzyme, but differ in optimum pH and other properties. © 1969.
