冷藏苹果蜡质中酚类物质及抗氧化活性的研究

本文以“红星”苹果为试材,首次研究了低温贮藏过程中1-MCP和DPA处理对苹果蜡质酚类物质、抗氧化活性、和α-法尼烯、共轭三烯以及MDA、O2-·的影响。主要研究结果如下: 1 DPA和乙氧喹都能有效的清除体外自由基。DPA清除·OH和ABTS+·的能力要高于乙氧喹,而清除O2-·和DPPH·自由基的能力弱于乙氧喹;DPA和乙氧喹对于O2-·和DPPH·的IC50值都小于Trolox和槲皮素,对·OH的清除能力与Trolox和槲皮素相当。即DPA和乙氧喹清除O2-·和DPPH·的能力要强于Trolox和槲皮素,对于·OH的清除能力与Trolox和槲皮素无大的差异; DPA、乙氧喹和槲皮素的TEAC值都大于Trolox,即清除ABTS+·的能力都大于Trolox。 2低温贮藏的前4周,苹果果实蜡质的酚类物质含量及抗氧化活性逐渐升高,从第4周开始逐渐下降。1-MCP和DPA处理的果实蜡质与对照果实蜡质相比具有较高的总酚和类黄酮含量,具有更高的抗氧化活性,并且酚类物质含量和抗氧化活性之间呈现显著正相关。 3刺伤处理提高了1-MCP和DPA处理果实果皮的酚类物质及抗氧化活性,并且刺伤后苹果果实果皮的酚类物质和抗氧化活性之间呈现显著相关性。 4 1-MCP和DPA处理抑制了蜡质和果皮中α-法尼烯和共轭三烯的产生,果皮中α-法尼烯和共轭三烯含量高峰比蜡质中的推迟出现。 5 1-MCP和DPA处理降低了果皮和蜡质中MDA和O2-·的产生,使得果实中的MDA和O2-·含量处于一个较低的水平。
