摘要
A study has been made of the volatile constituents of some unifloral Australian honeys, using a gas chromatograph-mass spectrometer-computer system. The extracts of honey volatiles prove to be complex mixtures of at least 100 compounds. A surprising range of hydrocarbons and oxygenated compounds are present, some of which may be unique to the floral sources. © 1979, American Chemical Society. All rights reserved.
