The changes of various phosphate compounds were determined during the increase in rate of CO2 output and of sugar content which occurred in low‐sugar potatoes at 1° C. The contents of phosphate compounds were also estimated in high‐ and low‐sugar potatoes at 10° C. The increase in rate of CO2 output associated with higher sugar content could not be attributed wholly to an increase in the amounts of the hexose mono‐ and di‐phosphates; possible explanations are given. The changes observed in glucose‐1‐phosphate do not afford any explanation of the mechanism of sweetening and de‐sweetening in potatoes. In different metabolic data the quotient, glucose‐1‐phosphate/glucose‐6‐phosphate, remained close to that for phosphoglucomutase in vitro. Copyright © 1968, Wiley Blackwell. All rights reserved
