STRUCTURAL IDENTIFICATION OF OLIGOSACCHARIDES PRODUCED BY ZYMOMONAS-MOBILIS LEVANSUCRASE

摘要
The chemical structure of oligosaccharides produced by Zymomonas mobilis levansucrase (EC 2.4.1.10) was determined using enzymatic hydrolysis, mass spectroscopy, and C-13-NMR spectroscopy. The major oligosaccharide (98% of total oligomers) produced from transfructosylation reactions with -sucrose was identified as 1-kestose (O-alpha-D-glucopyranosyl-(1-->2)-O-beta-D-fructofuranosyl-(1-->2)-beta-D-fructofuranoside).
