摘要
Enterococci can act antagonistically on selected species of Clostridium, Bacillus and Lactobacillus in a canned ham environment. This phenomenon is a common feature of Streptococcus faecium, Strep, durans and Strep, faecalis. The antibacterial agent elaborated by these enterococci is probably a metabolite that diffuses into the medium or meat and may play a role in the preservation of commercial products.
