摘要
Chemical and enzymatic methods may be used to modify natural starches to endow them with new characteristics appropriate to a range of specific applications. Genetic modification of plants offers a new approach for creating novel starches with new functional properties similar to those of post-harvest modified starches, whilst also retaining important characteristics of natural starches.
