摘要
This paper presents a finite element analysis of the process of freeze-drying in a coffee sample. The numerical model which has been developed was based upon the Luikov system of partial differential equations which calculates the distribution of temperature, moisture potential and pressure within a capillary-porous body. The position of the frozen/dried interface is calculated from the temperature gradients either side of the sublimation front within the coffee sample.
