概述了超大气高氧 (2 1%~ 10 0 % )条件下果蔬采后生理生化、化学成分和品质变化 ,病原微生物生长和果蔬腐烂的关系 ,以及高氧处理在新鲜果蔬采后贮运中的应用前景
