牦牛酸奶和酥油中乳酸菌的分离和鉴定

摘要：

利用生化鉴定试剂盒,从青海不同地区牦牛酸奶样品以及酥油样品中分离出的乳酸菌种。分别为为嗜酸乳杆菌、罗伊氏乳杆菌、德氏乳杆菌保加利亚亚种、菌种为干酪乳杆菌干酪亚种或鼠李糖乳杆菌。采用Mi Seq测序的方法测定微生物的组成结构及其分布,结果表明,大通样品中含有细菌种类5个,刚察样品中4个,共和样品中含有5个,玉树样品中含有4个。牦牛酸奶样品中主要优势菌为乳酸杆菌和链球菌,主要包括乳酸杆菌(Lactobacillus)和链球菌种(Streptococcus)。通过主成分分析得知大通与刚察的乳酸菌菌株遗传亲缘关系较近,玉树及共和的酸奶的乳酸菌菌株遗传亲缘关系最远。
