电子鼻系统及其在谷物检测中的应用进展

摘要
电子鼻技术是近年来迅速发展的气味检测技术之一,可应用于目前以食品安全为背景下的粮食储藏品质评价、农畜产品新鲜度检测和酒类鉴别等研究领域,属于食品工业中无损检测方法。针对国内外电子鼻技术在谷物研究中的应用现状,全文综述了电子鼻的起源、构成、气体传感器阵列和模式识别分析方法等内容,重点介绍从1997年至今,国内外利用电子鼻在谷物检测中的主要研究方向及有关研究结论。最后提出电子鼻的广阔应用前景,希望能为今后的相关研究提供参考依据。
