不同品种葡萄皮、籽提取物多酚含量及抗氧化能力的比较研究

摘要
对不同品种的葡萄皮、籽中多酚物质的含量及其对ABTS和DPPH自由基的影响进行比较研究。结果发现,多酚含量较高的葡萄皮为刺葡萄和桑叶葡萄,含量分别为47.1mg/g和31.2mg/g。多酚含量最高的葡萄籽为赤霞珠,多酚含量为103.6mg/g。葡萄皮中以桑叶葡萄提取物自由基的清除效果最好,葡萄籽中以赤霞珠提取物对自由基的清除率最大,并且结果显示提取物对自由基的清除率与葡萄皮、籽中所含的多酚的含量相关。
