近年来，随着经济快速发展，人们越来越重视食品安全，食品安全关系到人们的生命健康。目前，食源性疾病已成为人们重点关注的问题，微生物检测国家标准方法流程多、耗时长，无法满足当前快速检测的需求。随着分子生物学技术的发展，将分子生物学检测技术应用于食品微生物检测已成为必然发展趋势。本文全面分析了分子生物学检测技术在食品微生物检测方面的应用，以期促进食品微生物检测的发展。
