摘要
综述了傅里叶变换红外光谱技术(FTIR)在食用油脂品种鉴定、掺假分析、理化指标、氧化产物、反式脂肪酸等的定性定量分析,以及在油脂氧化过程监测等方面的最新进展。随着FTIR相关硬件、软件的快速发展,FTIR快速、环保的优点将会得到更加有效和广泛的应用,逐步在油脂质量监控与加工生产领域替代传统方法。FTIR具有良好的发展前景。
