摘要
鱼类腐败是个极其复杂的过程,而微生物活动是引起水产品腐败变质的主要原因。文章概述了鱼类腐败过程和腐败菌、鱼类特定腐败菌以及腐败菌腐败能力定性和定量研究情况,为研发鲜鱼冷却链物流技术,提高鱼产品质量提供基础资料。
