摘要
国内市场近期曝光的多起肉类掺假事件引发了公众对食品安全的担忧。在肉类掺假形式层出不穷的情势下,对动物源性成分鉴别技术的研究逐步成为食品安全领域的研究热点。本文针对肉及肉制品的常见掺假形式以及免疫分析、红外光谱、蛋白质组学及分子生物学检测技术和研究现状进行综述,并对未来技术发展趋势进行了讨论。
