目前肉类掺假问题频繁发生,肉类掺假检验技术的研发已成为热点。文章综述红外分析、色谱分析、免疫分析和DNA分析等技术在肉类掺假检验中的应用,探讨肉类掺假检验技术法发展的趋势。
