摘要
近年来,畜禽肉掺假这一全球性问题引发了公众对食品安全的担忧以及各国政府的关注。由于经济利益的驱动,一些不法分子为牟取暴利,在畜肉和禽肉制品中搀杂使假,以价格低廉的畜禽肉代替价格高的畜禽肉,市场乱象令人堪忧。这种情势下,对畜禽肉制品掺假鉴别技术的研究成为食品安全领域的研究热点。本文对畜禽肉及其制品的真伪鉴别技术的研究进展进行了综述。
