酶法制备高含量EPA、DHA甘油酯

摘要
以酶促醇解精炼鱼油得到的混合甘油酯和浓缩鱼油乙酯为原料,利用固定化脂肪酶催化的酯交换反应合成甘油三酯型EPA和DHA产品。对不同的脂肪酶、真空度、酶反应温度和加酶量进行了考察;确定了适宜的反应条件:以底物混合物质量2%的脂肪酶Novozym435为催化剂,在100Pa的真空环境中,60℃磁力搅拌反应6h甘油三酯的含量基本可以达到平衡。酯交换反应产物经分子蒸馏分离后得到以甘油三酯为主的甘油酯产品(甘油三酯82.3%),基本不含有单甘油酯,其中EPA和DHA的含量分别可以达到40.4%和28.6%。
