数字PCR在食品快速检测中的应用进展

摘要
食品安全日益成为一个重要的公共卫生问题,食源性疾病、转基因食品和食品原料造假在发达国家和发展中国家都呈现出普遍和日益增长的趋势。传统检测方法费时费力,难以满足对食品快速检测的需求,应用新型数字PCR技术针对食源性病原体、转基因食品和原料造假的方法,开发出可以满足当下食品快速和精确监测的需要,并控制和预防人类食源性感染的最有效方法之一。为此,综述了近年来数字PCR技术在食品快速检测中的应用。
