摘要
1,1-二苯基-2-苦基肼(1,1-Diphenyl-2-picryl-hydrazyl,DPPH)自由基是合成的以氮为中心的稳定自由基,结构简单,反应容易控制,已广泛应用于各种物质提取物或纯化合物的抗氧化活性的评价和筛选。论文详述了目前国内外DPPH自由基应用于抗氧化剂的抗氧化活性评价的测定方法(分光光度法、电子顺磁共振法、电化学法和反相高效液相液色谱法)、原理,以及应用特性。
