摘要：

香菇多糖是从香菇中分离出的一种药用多糖,在免疫调节、抗肿瘤、抗病毒和抗感染等方面有很强的活性,其疗效高、毒副作用小,值得深入研究和开发。本文综述了香菇多糖的化学结构、分子量测定、生物活性和提取纯化几个方面的最新研究进展。
