摘要
肉类掺假一直备受关注,关乎公共卫生、宗教因素、食品安全、消费者身心健康及不良的肉类市场竞争。应该通过快速、准确的肉类物种鉴别来保护消费者免受这些非法行为侵害。近年来,由于DNA条码技术较高的特异性和敏感性,以及简便性和热稳定性而被提议作为鉴别肉和肉制品物种来源的有利工具。文章简述了DNA条码技术在肉类鉴别中的应用研究进展,并对这种方法的优点进行了讨论。
