摘要：

植物精油是一类具有一定挥发性的植物次生代谢物质。近年来植物精油作为一类新型天然保鲜剂,被大量开发和使用。本文综述了植物精油的性质及其主要化学成分,精油的抗氧化活性、抑菌活性及其对果蔬贮藏保鲜的研究与应用,并指出了植物精油在果蔬保鲜中存在的问题和今后研究的方向。
