脉冲强光技术在鲜切果蔬保鲜加工中应用研究进展

摘要
鲜切果蔬因方便新鲜、营养丰富而受到消费者推崇,但在加工和贮藏过程中品质极易劣变,同时受到微生物侵染,降低其食用品质并缩短了货架期。脉冲强光是一种冷杀菌技术,具有快速高效、环保节能和无残留等特点。本文简述了脉冲强光技术的杀菌机制和特点,并介绍国内外将其应用于鲜切果蔬杀菌和保持贮藏品质的最新研究进展。
