摘要
猪肉的感官品质受遗传、营养和饲养、屠宰及加工条件等多种因素的影响。本文系统综述了猪的基因型、性别、年龄、饲粮营养水平、矿物质、维生素、生长促进剂及屠宰条件对肉质的影响规律 ,为制定提高猪肉品质的综合措施提供参考
