摘要
Microbial contamination of food-contail surfaces is an ongoing concern for the food industry. Under favorable conditions, bacterial cells can adhere and reproduce. Such microorganisms, if not completely removed, can contribute to the formation of biofilms that will compromise the quality and safety of foods. By understanding the relationship between surface conditions and microbial adhesion, strategies can be developed that when realized would greatly inhibit, if not prevent, the attachment oi bacteria and spores.
