Rheology of gelatin solutions at the sol-gel transition

摘要
This paper presents the results of rheological measurements of solutions of gelatin in the transition zone preceding the gel temperature. The relaxation function G(t) proposed by Martin, Adolf, and Wilcoxon [Phys. Rev. A 39, 1325 (1989)] leads to very good agreement between the experimental data [eta'(omega) and eta''(omega)] and the calculated curves. The gel strength and characteristic time are determined as a function of temperature.
