Different regioselectivity of two commercial acetylesterases for hydrolysis of paracetylated maltose

摘要
Two commercial acetylesterases from Aspergillus niger with an associated amyloglucosidase degraded 6% and 25% of peracetylated maltose. This difference is explained by the regioselectivity of deacetylation :the acetylesterase from Sigma attacked the C1 and C2 atoms of the glucosidic ring whereas acetylesterase from Viscozyme attacked the C1 and C6 atoms and cleaved the bond alpha 1-->4 of the substrate.
