摘要
The monolayer technique was employed to monitor the microbial lipase biocatalysed hydrolysis of triglycerides with different acyl chain lengths. The kinetic data were correlated with those obtained employing the substrate in an emulsion. The influence of the monofilm surface pressure on the hydrolysis rate and activation energy was evaluated.
