With the success following the establishment of essential nutrients and the practical elimination of deficiency diseases through fortification of the food supply, nutrition is now turning to a new generation of issues-promoting health, preventing disease, and assuring individual balanced food intake. Nutritional strategies to improve health must now focus on variations among individuals in their metabolic response to nutrients. What works for one individual does not necessarily work for all individuals. Hence, assessments that reflect global metabolism within individuals must be developed. Assessment of health can be documented by direct measurements and nutritional guidance to provide multiple health benefits to individuals. The quantitative measurement of all fatty acids in blood is an example of how metabolomic approaches will proceed in the future. (C) 2004 Published by Elsevier Ltd.
