β-cystathionase activity within the Lactobacillus delbrueckii specium

摘要
Lactobacillus delbrueckii ssp. bulgaricus and ssp. lactis synthesize a beta-cystathionase (PatC). Like most beta-cystathionases, PatC is a pyridoxal-5'-phosphate-dependent enzyme. Nevertherless, PatC from L. delbrueckii ssp. bulgaricus is sensitive to iodoacetic acid and displays high resistance to temperature. PatC activity is shown to be strain-dependent within L. delbrueckii specium. It is speculated that PatC could be involved in the flavour development.
