PHOSPHATE DETERMINATION IN FOODSTUFFS USING A PLANT-TISSUE ELECTRODE

摘要
It is well known that phosphate concentration can be determined from the inhibition by this species of acid phosphatase activity. A suitable plant tissue electrode for the analysis of inorganic phosphate was developed by adding the enzyme glucose oxidase to a slice of Solanum tuberosum containing the acid phosphatase enzyme and using an amperometric Clark electrode as indicating sensor. The biosensor was fully characterized and used for phosphate determination in authentic matrices such as fresh and powdered milk. wine and tomato puree. The results obtained were compared with those obtained using Bartlett's spectrometric method.
