摘要
Several filamentous fungi were grown on solid state fermentation systems and selected for their highest yield in lipolytic activity, low protease levels and dairy flavor generation. P. candidum, M. miehei and P. camembertii were the selected ones. A comparison between kinetics in solid and submerged fermentation was performed using P. candidum, with the solid system giving the highest titers and a stable production.
