DETERMINATION OF SKATOLE AND INDOLE IN BACKFAT AND LEAN MEAT OF PIGS BY HIGH-PERFORMANCE LIQUID-CHROMATOGRAPHY (HPLC) WITH FLUOROMETRIC DETECTION

摘要
This article describes a rapid and specific method for determination of 3-methylindole (skatole) and indole by high-performance liquid chromatography (HPLC) with fluorimetric detection in lean meat and backfat of pigs. The mean recovery of added skatole and indole was 104% and 106%, respectively, in backfat and in lean meat. The detection limit of the two compounds is approximately 0.005-mu-g/g. The mean coefficients of variation with this method are 5% for skatole and 10% for indole (intra-assay) and 6% for skatole and 11% for indole (inter-assay). The concentrations of skatole and indole were determined both in the backfat and the lean meat samples of boars used in examination. The results are specified comparatively.
