Salmonella enteritidis phage type 4 incubated in broth at pH 9.2 +/- 0.2 for 5 min or longer became significantly more heat-resistant (P < 0.001) when subsequently heated at pH 7.0 but not when heated at pH 9.0. The induction of enhanced heat resistance was not associated with an increase in cell numbers, occurred rapidly and was probably phenotypic.
