摘要
A fructosyl-transferring enzyme from Aureobasidium sp. ATCC 20524 which produces 1-kestose from sucrose was immobilized onto a shirasu porous glass (1142 U g-1 support). The enzymatic profiles of the preparation were almost identical to those of the native one except that its stability was improved. The column packed with it was stable for more than 30 d during a continuous operation.
