摘要
Malic and citric acid can easily be determined in apple juice by means of reversed-phase high-performance liquid chromatography. Sample preparation is not necessary. For some juices a comparison is made with the enzymatic and Rebelein methods. Adulterations can rapidly be recognised by this method. © 1979 J. F. Bergmann Verlag.
